Superfood Trail Mix Cookies

Ingredients

  • 1 cup gluten free oats 
  • 1 cup almond flour 
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp Himalayan pink salt  
  • 1/2 tsp cinnamon 
  • 1/2 cup NuttZo smooth power fuel
  • 1/4 cup raw honey 
  • 3 tbsp coconut oil, melted 
  • 2 tbsp ground flax mixed with 6 tbsp water  
  • 1/2 tbsp vanilla extract 
  • 1 cup mixed mulberries, goji berries, raisins, currants, pepitas, sunflower seeds, & peanuts
  • 1/4 cup 100% Pure7 chocolate, chopped

Instructions

  1. Preheat your oven to 350 & line a baking sheet with parchment paper.
  2. In a medium sized bowl, mix your ground flax with the water to make your flax eggs. Let sit while you combine all your dry ingredients in a large bowl. 
  3. To your flax egg at the rest of the wet ingredients until combined. 
  4. Add all the wet ingredients to the large bowl with your dry ingredients. Mix until well incorporated.
  5. Fold in your nuts, seeds, dried berries & chocolate. Roll into 1 1/2 in Balls & set on lined baking sheet. Press the cookies down with your fingers & pop in the oven for 10-15 minutes or until golden brown.
