Paleo Vegan Cookie Dough Fudge

Ingredients

  • 3 tbsp vegan butter (or ghee if not vegan,) browned over medium high heat
  • 1/2 cup cacao butter wafers 
  • 1 tbsp vanilla 
  • 1/2 cup pure organic maple syrup
  • 3/4 cup raw cashews, finely ground
  • 1/3 cup almond flour 
  • 1/4 tsp himalayan pink salt
  • 1 Pure7 chocolate bar, chopped

Instructions

  1. Once your vegan butter has browned, remove from heat and stir in the cacao butter until melted. Add in maple syrup & vanilla, set aside. 
  2. Blend your raw cashews until really fine in your blender. Add in your almond flour & salt. Blend again to combine. 
  3. To your blender add in your melted butter mixture. Blend again until wet dough forms. 
  4. Fold in your chopped chocolate (make sure mixture is completely cooled before adding in your chocolate.) Press mixture into a 8×4 in loaf pan lined with parchment paper & pop in the freezer for an hour or two. 
  5. Cut into tasty bite sized squares, keep in an air tight container in the fridge or freezer! Enjoy!
